Green Beans with Garlic and Parmesan Cheese

We received the first picking of green beans in our CSA basket last week! They were slender, blemish free and almost velvety. I am  not very creative cooking green beans, usually just steaming them and drizzling with a little butter. However, in our newspaper last week I was intrigued when I saw this recipe. The only change I made was to add garlic.

Wash and trip stem ends of green beans.

Heat 1 T. olive oil in a large non-stick skillet over medium high heat. Add 4 c. beans, cover and cook for about 8-10 minutes. (we like our beans still a bit crunchy) Stir several times and reduce heat if  they are browning too quickly. Sprinkle with 2 T. grated Parmesan cheese, one clove minced garlic, salt and freshly ground pepper.

Continue cooking for a few more minutes, stirring several times, until the cheese starts to brown.

This method of cooking fresh beans have taken that simple vegetable to a whole new level! The flavor was fantastic and the slightly browned cheese added some salty crispiness.
