Grain-Free Banana Cookies

 These grain-free cookies are crispy on the putside and chewy on the inside. They are made with arrowroot and quinoa flour. Arrowroot powder is made of a dried root of a tropical plant. Most commonly considered a grain, quinoa is actually a relative of leafy green vegetables like spinach, kale and Swiss chard. So, technically, these cookies do not contain any grains; they are gluten-free and vegan.

Grain-Free Banana Cookies

Ingredients:

(yields about 20 cookies)

1 1/2 cups quinoa flour

2 cups arrowroot powder

1 cup coconut oil , melted or olive oil

1/2 cup maple syrup

4 small bananas, mashed

2 tsp. vanilla

Directions:

Preheat the oven to 375 *F.

Mix all ingredients carefully, so that there are no clumps. Slowly spoon the mixture onto the lightly oiled cookie sheet and bake for about 12 minutes or until the cookies begin to lightly brown on top.
