Gluten Free Chocolate Chip Pumpkin Muffins

I can’t even remember the last time I ate something like this. It’s been at least 2 years. So when I saw this recipe on the lovely Miss Britneys blog over at  Itty Bits of Balance, I couldn’t wait to give it a try!

My recipe was a little bit different than hers…

Ingredients:

  • 1 1/2 cup of GF all purpose flour
  • 1/2 cup of GF oats
  • 3/4 tsp of xanthan gum
  • 3/4 cup of sugar
  • 1/2 tsp of baking soda
  • 1 tbsp baking powder
  • 1/4 tsp of pumpkin pie spice
  • 1/4 tsp of cinnamon
  • 1 15 ounce can of pumpkin pie puree
  • 1/2 cup of water
  • 1/2 cup of chocolate chips

  1. Mix the flours, oats, sugar, xanthan gum, spices, and powders in a large mixing bowl.
  2. Add the water, pumpkin, and the chocolate chips, and pour it into greased muffin pan.
  3. Bake at 375F for 25-30 min depending on the size of the muffins

Fonzie and I waited paitently for about 30 minutes.

It was I could bear to wait for them to cool, but man were they worth it!

Brittneys were 89 calories, but mine had chocolate chips >_< but even when you factor that in, it’s still do-able  ;)
