Another busy day with wedding preparations for Kevin and Linds’ big day coming up. Also, we are moving this weekend. We already moved a truck load of boxes from Columbus to Cleveland and are excited that we will be moving our furniture this weekend.
In between teaching spinning and making goodies for the wedding, I did have time to make a batch of “healthy” creamy mashed potatoes.
Garlic Infused Herb Mashed Red Skin Potatoes
1 small bag of red skin potatoes, washed and cut into pieces
3 cloves of fresh garlic, minced or pressed
½ cup of 1% cottage cheese
¼ cup of low-fat ricotta cheese
1 teaspoon butter
1 tsp. Garlic Wine seasoning
1 tsp. garlic salt
a pinch of fresh herbs, basil, rosemary, and thyme
1 tsp. fresh pepper
Place potato cubes in a small saucepan and cover with water. Add minced garlic to the potato water.
Bring to a boil; cook until the potato is tender.
Drain; add butter, cottage cheese, ricotta cheese, and seasonings.
Mash with a potato masher to the desired consistency.
Stir in herbs. Season with salt and freshly ground pepper.
