Garlic Chicken

So brown hair and a cheesy laugh are not the only things I have in common with Rachel Ray - like the famous cook, I also LOVE garlic. If you follow the blog you will notice it is one of my go-to ingredients for many dishes.  I think it has a great taste quality and I use it in many sauces and as to season meat of all types. Garlic also has many health benefits from lessening the risk of heart disease to keeping away vampires - its really a useful root!

So you should not be surprised that this simple and clean dish incorporates this wonderful flavor. Don't worry though - its not too heavy with garlic flavor - just enough to compliment the natural flavor of chicken. So try this one out for dinner tonight! Enjoy!

Garlic Chicken
Ingredients:
2 boneless skinless chicken breasts
2 tbsp of Annie's Naturals - Tuscan Italian Dressing
1 tbsp of fresh ground garlic
sea salt and fresh ground pepper to taste.

Instructions:
Pour the Annie's Naturals Tuscan Italian Dressing on a plate and then dip your chicken breasts in the dressing, coating both sides with dressing. Then season the chicken breasts with garlic, sea salt and pepper. Place chicken breasts in a medium or large frying pan with about 1/4inch of olive oil in the pan. Pan "fry" the chicken breasts on medium to high heat for about 7 minutes or so on each side. Then turn heat down to low and cover pan with lid or aluminum foil. Cook chicken for an additional 10 minutes with lid on - to be sure chicken is cooked through. Once your chicken is finished cooking place it on a plate and then sprinkle with mozzarella cheese. Serve and enjoy! (makes 2 servings).

If you are cooking for one like me - save the extra chicken breast and dice it up to use on salad the next day for lunch or on a pizza crust for a clean chicken pizza!
