Crisp bread slices flavoured with garlic and topped with mushroom
Time required - 20 minutes Serves 4
You will need
1 tablespoon ( 15 ml ) olive oil 330 g large white button mushrooms, sliced 25 g parsley, chopped fine 25 g fresh basil, chopped fine Salt and freshly ground black pepper to taste 4 thick slices crusty bread 1 flake ( 2g ) garlic, halved
Heat the olive oil in a large non-stick skillet over medium heat. Add the mushrooms and cook, stirring, until browned, for about 10 minutes. Sprinkle with the parsley, basil, salt and pepper and remove from heat.
Toast the bread. Rub one side of the bread lightly with the cut side of the garlic. Place the bread on four dinner plates. Spoon mushrooms onto the bread, distributing evenly and serve.
