Just as I wrote a post recently about savoring the last few days of Summer and celebrating Summer vegetables in all their end of season glory, our very next CSA box contained the first squashes of the cooler seasons. Not that I'm complaining, though, really, as perfectly round pumpkins are a lovely surprise to find on one's apartment doorstep...
Fruit and Cheese Winter Squash
2 large winter squash (I used 1 medium sized pumpkin and 1 butternut squash), sliced in half, placed in a baking pan with 1/2" of water, and baked in a 350 degree oven until tender 2 T SmartBalance Light 3/4 cup pear cider 1 cup grated sharp aged cheddar cheese
~ Scoop the cooked winter squash into a large pot on the stove-top over low heat. Stir in the Smart balance light and pear cider, and mash with a potato masher or large wooden spoon until smooth. ~ Once the squash mixture is warm and smooth, stir in the grated cheddar cheese until melted. Season to taste with salt and pepper, and serve warm, with cinnamon and nutmeg for garnish, if you like!
