Fried mushroom & baby corn, Fried potato with cheese slice and Moong dal parathas

Fried baby corn & mushroom

You need

8 fresh mushrooms
8 fresh baby corns
Oil for frying
1 cup bread crumbs

For the batter :

1/4 cup flour
1 egg
Salt and pepper powder to taste
Water for mixing









Method

Make a batter with the flour, egg , seasoning to taste and water.

Dip the washed and dried mushrooms and baby corn into the batter and roll in breadcrumbs.

Deep fry in hot oil and serve with tomato sauce and French fries.



Fried Potato with Cheese slice

You need

2 medium potatoes
4 cheese slice
Chilli powder for sprinkling
Salt to taste
Oil for sauteing





Method

Par boil potatoes , cool and slice into roundels.

Cut cheese slice to fit the potato slices and place over the potatoes.

Saute in hot oil till the cheese melts a little and the potatoes are crispy. Serve hot with tomato sauce.





Moongdalparatha

You needJustify Full
1 cupmoongdal
2 cups wheat flour
1 tablespoon oil + extra oil for fryingparathas
Warm water for mixing
1/2 teaspoon finely chopped ginger
1/4 teaspoon roastedjeerapowder
1/4 teaspoon dried mango powder (amchur)
Salt to taste

Method

Cookmoongdalin pressure cooker with just enough water ( approximately 3/4 cup water ) to make it soft but dry. Then mash thedaland add the ginger ,roastedjeerapowder ,amchurand salt to taste.

Knead the flour with warm water, one tablespoon oil and a little salt for the dough. Cover and keep aside for 30 minutes.

Divide the dough into small rounded portions and shape it like a bowl with your thumb.

Keep themoongdalstuffing inside the bowl shaped dough and then seal it properly by folding the dough over the filling.

Roll out with rolling pin. Sprinkle a little dry flour so that it does not stick to the rolling surface.

Shallow fry this stuffed paratha in a non - stick pan . Apply oil on both the sides. Repeat the same process for remaining parathas.
