Fresh Strawberry Lemonade Oatmeal Bars

It's already a fabulous day because the beau and I were able to sleep in this morning, the sun is shining big and bright and I am blogging away while he is jammin' on the electric that dad let him borrow last night. Nothing says Easter than a sweet sounding guitar and cadbury cream egg in the morning.

We're trying to spend the morning relaxing with the pup's before heading to grams house with the whole family, kids, pups and friends and then later on tonight down to his Aunt's. It's going to be a busy but really fun day.

It's also a fabulous day because I received some coconut oil in the mail to test out and review last week and I was finally able to give it a whirl this weekend. I decided to use the coconut oil for my oatmeal bars, that I have been craving and had to make, with my favorite spring fruit... strawberries. 
I have been cooking a lot with coconut oil ever since I read all the healthy benefits and ways to cook with it from a favorite health writer of mine, so when  Kelapo  contacted me about their organic coconut oil I was ecstatic. Coconut oil is lighter, healthier and a cleaner way of cooking plus the aromas of the oil cooking off add such depth to your dishs. 

Kelapo  has no yeast, gluten, milk or milk derivatives, lactose, salt, preservatives, soy, artificial color or flavors. It's the cleanest and smoothest coconut oil I have ever had and it's excellent with baking, trust me. I also compared it to the coconut oil that I had been buying in the stores and surprisingly it's cheaper than most brands, cheapest still being Trader Joe's.
Now, strawberries and coconut together.... that is a combination that I was totally ready to indulge in. I am so excited that we are in strawberry season because freshly picked and ripe strawberries are the best. I can easily go through and entire container just snacking at my desk at work... they are just so delicious. 

My oatmeal bars are the perfect sweet treat without getting crazy on calories, unhealthy fats or even heavy processed ingredients. Add a dollop of freshly coconut milk whipped cream and you have yourself a full dessert everyone will love. These bars are filled with all natural ingredients, fresh fruit and surprise... they are VEGAN!

Guilt-free and delicious, I am in!

Fresh Strawberry Lemonade Oatmeal Bars
'Vegan, Vegetarian, Dairy-free'
Time: 45 minutes
Yield: 16 servings

1 cup whole wheat flour
1/2 tsp salt
3/4 cup brown sugar, packed
3/4 cup Organic Kelapo Coconut Oil
2 cups oatmeal, rolled oats
1 tbsp organic finely ground flaxseed
2 1/2 cups strawberries, fresh, chopped
2 tbsp honey
1 tbsp lemon juice
1/2 tsp lemon zest
Kelapo coconut oil, for greasing pan

Preheat oven to 375 degrees. Coat a 9 X 13 baking dish with coconut oil or parchment paper. In a large bowl, combine flour, brown sugar and salt. With your hands mix in the coconut oil, oats and flax seed until well blended. Set aside 1 1/2 cups of the mixture for topping. Press the rest of the mixture firmly into the bottom of the baking dish. 

For the filling mix strawberries, honey lemon juice and zest with a spatula until the fruit is well coated. Spread the mixture on top of the crust. Sprinkle the reserved topping over the filling. Bake for about 35 to 40 minutes, or until the top is golden brown. Let cool for 2 hours, cut into bars and refrigerate in an airtight container to store.
