Over the weekend, my roommate visited her family in New Jersey and came back yesterday with a basil plant!
Her grandfather, Sabi, was generous was enough to give us this wonderful gift. Thanks, Sabi! Looks quite nice on our windowsill. I’ve always wanted to grow my own fresh basil and was all too excited to incorporate it into my dinner tonight. My meal came together pretty quickly.
Pan-roasted collard greens salad topped with couscous, carrots, yellow squash, onions and turkey burger patty. I chopped up some basil and mixed it with ground turkey, along with some Worcestershire sauce, mustard, garlic, and chili powder. Then my standard salad dressing: a drizzle of lemon juice, olive oil, salt, and pepper. Mix it all together now!
Yum. Nutritious and delicious. I’m an honorary member of the Clean Plate Club by the way and today was no different. The fresh basil made all the difference in the patty and I’m excited to use it generously in my future dishes.
Gotta go get my fill of trashy reality TV for the night. Real Housewives of NJ, my Mondays are much more bearable because of you. Have a good night!
