Food Matters documentary and a speedy quinoa recipe

Hello! I’m sad to tell you all that I’m suffering from a serious stomach bug this week so unfortunately it might be a few days until my next recipe post as I can’t cook at the moment – I can’t tell you how much I’m missing my kitchen experiments! But in the mean time I wanted to share this awesome documentary from Food Matters with you all. It’s all about the importance of a healthy, plant based diet and it’s free to watch online until Friday! So take a look, it’s really very cool.

Want to know one of my favourite things about the documentary? It emphasises the super powers of raw cacao powder, which gives us all an even better excuse to go whip up some of my raw brownies! Yummm.

Anyways after you’ve watched it I’m sure you’ll be craving some delicious plant food so I thought I’d leave you with a wonderfully simple dinner recommendation to fill in for my lack of recipes!

This quinoa bowl filled with zucchini slices, cherry tomatoes and avocado cream is one of my favourite go-to, speedy weekday suppers. It is just so delicious, so healthy and so simple.

You just cook the quinoa with a tablespoon of apple cider vinegar and a sprinkling of salt, then three of four minutes before it is finished add the zucchini slices so that they soften slightly. Then, once fully cooked, stir in the avocado cream and quartered cherry tomatoes. Delicious!
