How about a decadent peanut butter chocolate chip cookie, which is vegan, gluten-free contains no flour and is made with just 5 ingredients? I made these cookies last weekend and they were gone before I closed the oven, or so it seemed. They were that good. I used dates as a sweetener. If you like the chewy texture of dates, you can simply chop them. Otherwise, puree them in a food processor.
These cookies are sublime while warm because of the gooey chocolate that’s inside!
Flour-less Peanut Butter Chocolate Chip Cookie
( yields 16 cookies)
1 cup natural peanut butter
12 large Medjol dates or 16 small dates, chopped or pureed in a food processor
1/2 cup dark chocolate, broken into small pieces
1 large ripe banana, mashed
1 tbsp. ground flax seed
Preheat the oven to 375 * F.
In a large bowl, combine all ingredients. Spoon the batter onto a baking sheet, covered with ungreased parchment paper. Bake for 15 minutes. Leave on the baking sheet to cool for 10 minutes, then transfer to wire racks to cool or serve warm.
