Hey guys! Happy Fridayyyyy!!! I don’t know about you but I am so happy this week is almost over. I have been working so hard lately and I just need a couple days to catch my breath. Phew! I also cannot begin to tell you how happy I am to have a short week next week. I totally need this break!
Speaking of next week, I am trying to think of some Thanksgiving dishes to make for my family next week. I am hoping to make something ahead of time (probably on Tuesday) that I can just throw in the oven on Thursday, since my dad’s kitchen is likely going to be a madhouse and I won’t want to be worrying too much about my dish. Do you guys have any suggestions? I am thinking either a side dish or a dessert, though I am really open to all ideas!
Anyway, as I mentioned it is Friday, which means it’s time for my roundup of favorite pictures from the week! Yay!
You guys. Can we just talk about this for a second? I thought I had seen the last of the beautiful trees right before Sandy hit , but apparently I was mistaken. Isn’t it a little late for trees to be turning such vibrant colors? And I don’t mean like one or two leaves I mean like, that tree is 100% yellow. Crazy right? Anyway, these are just some of the trees that are in my neighborhood that I run by every morning with Jack. There’s nothing like some beautiful scenery to start your day!
There is something so comforting about a bowl of homemade chicken noodle soup, right? I made this for dinner last night and I couldn’t believe how easy and delicious it came out! It was really easy to throw together and was pretty healthy since I added in so many veggies, used a mix of low-sodium chicken broth and water, and used whole wheat noodles. Success! I promise to share the recipe with you all soon because this is one soup you are definitely going to want to make. Comfort in a bowl, I tell ya!
Fabio’s work had a “Thanksgiving Potluck” this week so I whipped up a few pumpkin bars with cream cheese icing for him to take. I used this recipe and healthified it a little by using whole wheat flour and nonfat Greek yogurt in place of some of the oil. They turned out delicious (even if they don’t look that great haha) and Fabio said everyone enjoyed them! I made sure to get most of them out of the house so I didn’t stuff my face in them, but I did manage to sneak one or two before I packaged the rest up Woopsiiiieeee! haha.
Last night while slurping our soup, Fabio and I chose a movie to watch On Demand. We chose 21 Jump Street and it wound up being really good!! It was hilarious and had both of us cracking up at times. It also seemed fitting given Channing Tatum’s recent news , and it helped sway me against my previous notion that it should have gone to Ryan Gossling ( <– seriously funny link right there). All in all, I would definitely recommend this movie, but I am still kind of torn between Ryan and Channing. Whose side are you guys on?

This book was recommended to me by a bunch of my friends, but I have to admit it was a little slow going for me. I felt like the first few chapters nothing was really happening, but now things are really starting to pick up and I do NOT want to put this book down!! It’s getting so good and I am really enjoying it. I’m usually not really into the whole vampire/witch thing (except for Harry Potter, obviously haha) but this one is a fun read so far. I’m pretty sure this book is part of a larger series, so we will see if I get sucked into the whole thing. Stay tuned!

My dad experiments with some awesome stuffing and each year he plays around with different flavor combinations. I am also a fan of sweet potato casserole with marshmallows on top. Yum!!
