Somehow, tomorrow is the first of October. How that’s happening, I’m not sure. It seems like summer just began here in the Pacific Northwest. It’s been a beautiful two months, and I’m telling myself to welcome autumn with open arms. While I put on my fall jacket to go to dinner tonight, I accepted the beginning of the cool, crisp season. A few days late.
And I thought I’d rally together a list of favorite recipes from around hyperspace. They might make these now cooler days a bit warmer. They’re all family friendly and low-maintenance. I hope you enjoy them too.

I haven’t actually tried making applesauce this way yet, but I can’t wait to. It’s an all bake, no boil method. Brilliant. I can almost smell the deliciousness of baking apples.
Heidi’s Skinny Omelette Recipe
On the right days, I make these for breakfast and lunch. I love the versatility and guilt-free sustenance. I like to stuff mine with fresh spinach, goat cheese, tomato slices, avocado and anything I have on hand.

We’re potato crazed people, maybe it’s in our German blood. These are simple and gourmet, and a welcomed change of pace from fries. A handful of fresh baby potatoes was made for these.
