Fave Five Friday: Delectable Tacos & Burritos

I took the suggestion from my sister, Kim, to do a Fave Five Friday on healthy tacos and burritos – and this was perfect because I already had quite a few bookmarked as “must make”! Plus, it’s now the dead of winter here, and tacos/burritos remind me of sun, sand, and beach… so a girl can dream.. while staring out the window at the cold white abyss munching away on a Sweet Potato Burrito Smothered in Avocado Salsa Verde .. right?

I am a huge fan of tacos/burritos – of course, you can see my own creation, Grilled Shrimp Tacos .. with my homemade salsa and black bean spread. I love the fresh flavors and endless combinations that can be rolled up into a tortilla or stuffed into a taco shell!

Here are Five of my Fave Delectable (and healthy, of course!) Taco & Burrito recipes out there on the web, screaming to be made and devoured!

1. Healthy Fish Tacos with Mango Salsa Verde from Handle The Heat

Mmmm there is nothing better than sitting on the beach in Mexico enjoying a flavorful freshly caught fish taco. The last time I was in Mexico, I’m pretty sure I ate a taco every day. But why not?! They were fresh, simple, and healthy – and so are these! This recipe is great, first of all because the fish is broiled, not battered and fried, and it’s kept simple with light seasonings and topped with a fresh mango, tomato, red onion, and cilantro salsa, sitting pretty in a toasted whole wheat tortilla. Simple, light, healthy, perfection.

 

2. Sweet Potato Burrito Smothered In Avocado Salsa Verde from Cookie + Kate

This burrito recipe caught my eye right away (as do most of the recipes off Cookie + Kate, I love this blog, please check it out!). It’s vegetarian, and the sweet potato (in a burrito?! I know!) takes the place of meat, keeping the burrito filling and hearty. The combination of flavors; sweet potato, black beans, roasted red peppers, avocado.. all sounds too good to be ignored! These burritos are a great healthy meal full of nutrients that I’m sure the whole family would enjoy. They LOOK super indulgent but the healthy fats, good complex carbs, protein, and fiber are a great choice for any well rounded lunch or dinner!

3. Raw Taco Fiesta from 86 Lemons

These are a completely different take on the typical taco – they are raw, vegan, and gluten free. When these were posted on 86 Lemons, the writer, Livvy, was doing a 28-day detox, and these tacos fit the bill! They are super unique. The taco “meat” is actually made from ground walnuts, the “sour cream” is made from cashews, and the fresh salsa looks absolutely amazing – all wrapped up in lettuce “taco shells”! For a very ‘clean eating’ natural, all raw taco, these are perfect. Must try a.s.a.p!

 

4. Slow Cooker Chicken Burritos from Claire K Creations

Mmm… slow cooker. Sometimes that’s all that needs to be said “slow cooker” and you know the recipe is going to be a warm, comforting, and incredibly delicious. Food that gets to take it’s time to develop it’s flavors, sit in it’s delicious juices, and cook over time, is always delicious. This recipe combines chicken, tomatoes, garlic, spices, and beans all in the cooker to simmer for hours, the chicken becomes tender enough to just pull apart, perfect for a burrito filling! These burritos do not need any salsa, just a little sprinkling of cheese, and a hungry belly!

 

5. Fruit Tacos with Chocolate Tortillas from Munchin with Munchkin

Oh my, you knew I had to, I just had to put a dessert taco in this list. The thing I love about this recipe is even though they look a little naughty, and indulgent, they are actually still really healthy! The taco shells are made with whole wheat flour, coconut oil, cocoa powder, and agave nectar (the recipe calls for part whole wheat flour, and part all purpose, so I would substitute all whole wheat pastry flour instead and kick the refined flour to the curb). There are no refined sugars, and just a simple mix of fresh fruit as the filling. Top it all with a drizzle of plain yogurt and honey, and you have yourself one heavenly taco!
