I have to say that today’s meals were based around my farmer’s market finds from the weekend. J and I went to visit my parents this weekend, since it was my dad’s b-day. It was a relaxing and enjoyable time, just a good time to get away from everything. But it the best part were the farmer’s stands with produce. The corn that was featured in dinner tonight was fresh out of the field, the silks still sticky and the skins still damp. This was by far the best sweet corn of the year, and what better way to feature it than in a salad.
So good, it makes me almost want to have it again… Luckily for me, there still some left, which will make for a good lunch tomorrow! (My goodness, that looks like a lot of cheese, but I swear it’s just a little bit of the fine shredded stuff!)
As for me, I’m just catching up from the weekend, and watching part of the VMA’s, which I haven’t done in a long time, but glad I did. One of my favorite bands, MUSE is currently performing.
