Ething ( Rice cake steamed in banana leaves from Arunachal Pradesh )

Rice – 500 g
Banana leaves – 2 nos.


1, Grind rice to a fine powder.

2, Clean banana leaves on both sides with a damp cloth. Dry and pass over a live gas flame to make them pliable, taking care not to burn the leaves. Cut banana leaves into eight- inch squares.

3, Shift rice powder into a bowl. Gradually add water and knead to a soft dough.

4, Place about half a cup of the dough in the centre of each banana leaf square and fold to make parcels. Tie with cotton string to secure parcels.

5, Steam for 20 minutes.

6, Serve with hot tea.
