Erin’s #11

The #11 Vegetarian Special – my go-to sandwich order at Lenny’s .  I actually crave it…Lenny’s is dangerously close to my apt and my office but a $7 sandwich, however, cannot become a habit.  So for even less money than one of these, I bought the ingredients to make my own for lunch a few times this week.

I didn’t replicate it exactly, but I got pretty darn close.

Erin’s Vegetarian Special

  • 2 slices whole grain bread, toasted
  • 1 tbs hummus
  • 1-2 tsp dijon mustard
  • 1/4 of an avocado, sliced
  • 1/4 cup each of shredded carrot, shredded cabbage and mixed greens*
  • 6-8 each of jarred banana peppers and sweet peppers

After toasting your bread, spread one slice with hummus and the other with mustard.  Place the avocado slices on one half, then layer your carrot, cabbage and greens.  Top with peppers and put it together!

*I found the Whole Foods salad bar to be a great cheap resource for the pre-shredded carrot and cabbage.

There are no rules with this sandwich – don’t use the hummus, add tomatoes, omit the banana peppers, put it in a pita instead of on bread…the possibilities are endless.  But I promise the combo in my recipe is deeeelicous.
