Enjoying Egg Minus the Yolk.

I am an egg person and I love to have eggs for breakfast. However, egg yolk (the yellow part), is high in cholesterol. So either I did not have eggs, and missed them, or had them and then felt guilty about it.

I have now discovered a better way to have eggs. Instead of having one whole egg (with the yellow and the white part), I combine the white parts of 2 eggs and leave the yolk altogether. The white parts do not have cholesterol and are high in protein. Therefore, I get to have a healthy breakfast that is satisfying as well. If you are also an egg lover, then just try this!

My daughter loves egg whites fired like an egg without the yolk. If you have a dog, we do, feed him or her your egg yolks--great food for the canine.
This also applies to cooking and baking. There are a lot of recipes you can subtract the yolks by just adding another egg or two.
I like hardboiled egg whites. You can boil the whole egg, then when you peel it, just take out the yolk. The whites are great on crackers as a snack...or even on toast for breakfast!
I know they've been making egg white omelettes for the Hollywood elite for years. Sometimes, that taste is a little too light for me. I just saw where Egg Beaters is coming out with a new product -- mostly egg whites with a touch of yolk for flavor. That seems like a good compromise!
