I was reading some literature I picked up at the Maryland State Fair this week. Apparently, you can eat an egg or two a day without noticeable changes in your blood cholesterol. Eggs are a source of quality protein, low in sodium, low in calories and they even contain 13 vitamins and minerals!
They are also a pretty thrifty way to eat. When I was in law school, a friend of mine passed this recipe along to me: steam some fresh spinach lightly with some Greek seasoning. Scramble in an egg, along with some leftover rice. Squeeze some lemon over the whole thing and you’re done in a minute!
I love an egg. They are versatile, cheap and extremely high in protein. You can avoid most of the cholesterol by avoiding the yolk - and most of the calories, to boot. Here's a tip to get rid of the yolk - crack the eggs without pulling it apart. Drain your egg whites. Once drained, throw away the shells. The yolk should be sitting in there as though the shell were a spoon. Easy - no mess.
