Toffee brownies are hard to find in the world of gluten free baked goods. And they are generally not something I would make at home. Except today I learned that my friend Cynthia is coming over on Thursday. She has been wanting to snoop around in my cabinets for some time now and today I “sort of” cleaned the cabinets out. I didn’t really do much except shuffle some boxes and bags around so the shelves don’t look like a bomb went off. The good news is that I now know I have way too much tapioca starch and canned frosting. I also seem to have an abundance of walnuts, bread crumbs and quinoa. But what did I find? Half of a bag of Heath Bar pieces – and hence the brownies.
I don’t remember buying the bag of little toffee pieces. I do remember eating them out of the bag for a few days and then feeling guilty, knowing that I shouldn’t eat them like that. But they are SOOOO good. A perfect combination of sweet and salty and chocolaty – and they stick in your teeth! (I’m not quite sure why my computer doesn’t like the word chocolaty – is that a word?)
Anyway, I wanted to make something with this bag of Heath Bar pieces before I ate the rest of the bag. I made a batch of brownies using a mix (I had a box of Betty Crocker Gluten Free Brownie Mix) in the newly organized cabinet. I made the brownies as the package directed. Five minutes before they were done baking I sprinkled one cup of Heath pieces on the top of the brownies and continued to bake them. When I removed them from the oven, I covered the pan tightly with aluminum foil and allowed them to rest for 20 minutes while the toffee melted more.
They turned out really well. I wasn’t going to write about them because they were so simple but my husband made me share the recipe with you. He loved them. I never told him they came from a box and a bag (a half-eaten bag!).
Sometimes the best things in life are the simplest things….
So thanks Cynthia for making me straighten out my cupboards. We ended up with a great new dessert and now I know I need to start making quinoa and using up my walnuts!
