I hope everyone is having a wonderful Sunday so far!
Sunday is definitely one of my favorite days of the week. It’s almost always a relaxing day to take it easy, finish up some odds and ends, and take time to visualize the week ahead. Sometimes I have a family gathering, other times the Hubby and I make it a day to go walk around the mall and pick out all the things we would love to buy. Sometimes we actually come home with something, most often we don’t – but it’s fun to imagine we could have every item of furniture in Restoration Hardware, am I right?!
And, every (or almost every!) Sunday we go to church and take in the message. This morning it was about envisioning our futures and what the picture is that we have in our hearts for our future. Our pastor toyed with the idea of “what if there was an App for smartphones, that if you tapped your phone against your chest (your heart) it would come up with a picture of your future, or the vision you have painted in your heart of what your future is to be…” Well, that would first of all be really cool, and the creator of that App would make millions I’m sure!! But, it really got me thinking about my vision for 2013, and the blog, and where I hope to take it, or where I guess, I am meant to take it.
In the past six months I’ve seen my blog really grow and it is extremely exciting. I have people I don’t know from all over the world message me daily and tell me how they love the posts or find my blog inspiring! I can’t even begin to explain the warmth that makes me feel. I hope that through the year I can continue to build this blog to not be “just a blog” but a true inspiration and tool for people to make healthy changes in their lives, to feel better about themselves inside and out, and live happier…and just be even more AWESOME!
In my nutrition/massage therapy practice, I see clients overcome obstacles physically and mentally- for example, if they’ve struggled with their weight all of their life, or chronic pain for years from a past injury, I really try my best to direct them and provide them with the knowledge and tools to take control and make positive change happen. I will tell you, every single time one of my weight loss clients steps on the scale and we see that number has gone down, my heart skips a beat, and I feel like doing a happy dance (and sometimes I actually do, seriously)! So when I think of that fictional “App”, I see a vision of this blog inspiring and bringing positive change to others in the world, who even though I may never see them in person, I am still able to impact them to take control of their health, and make, and see positive change in their lives.
Now, maybe that’s a bit overzealous of me to hope for my little blog – but it’s in my heart, and I believe that it’s a vision with purpose, passion, and drive behind it… so I guess we will see what happens!! Thank you to those who have been supporting Nutritionist in the Kitch and giving me feedback, and if you are new here… (I promise I don’t write big heartfelt essays in every post), I hope you like what you see and will keep coming back and sharing my blog with everyone you know!
Whewf! Now that I got that off my chest, the recipe you’ve been waiting for!
This Easy Pulled Chicken is just that, EASY! If you have a slow cooker, or a crockpot at home, that’s all you really need. A great friend of mine introduced me to this recipe last week and I LOVE IT (Thanks, Brookie!). It fits perfectly into our Challenge diet, tastes amazing, and is super versatile!
This pulled chicken is great to have on bun as a “sloppy joe” kind of dish, on top of a salad, in a wrap, mixed with rice and veggies, or as simple tacos! Seriously, there’s a lot to do with this. You can turn it into a chili or a stew too by adding beans or veggies to the slow cooker! The simple ingredients keep this dish clean and healthy. It’s high in protein, low in fat, yet super moist and tender!
This is how I enjoyed the pulled chicken one night for dinner (below). Because the slow cooker makes a big batch, I portioned it out and also ate it in a wrap for lunch one day too! I still have more left in my fridge and I can’t wait to see how else I can incorporate this pulled chicken into a healthy well-balanced meal!
My dinner – Slow Cooker Pulled Chicken topped with avocado, served with sweet potato, quinoa rice blend, and a mix of veggies I seasoned with cumin, cayenne, garlic powder, and lime juice (corn, peppers, tomatoes, onion, cilantro)! (Please excuse my crappy quality iPhone photo!!)
This is a PERFECT meal to make on a Sunday. Just let it simmer in the slow cooker all day, and enjoy it throughout the rest of the week! I just know you’ll love it as much as I do!!
