Dress Up Your Veggies!

Here’s a simple little recipe for your Wednesday afternoon.
I always prefer to make my own salad dressings. The strange ingredients in the bottled sorts – corn syrup, fillers, MSG, chemical emulsifiers, various gelling agents – kind of weird me out. I don’t find making my own to be much more effort, and I end up being much more content with the ingredient list. This particular recipe is my typical, everyday salad dressing – although it’s always fun to play around with the ingredients. Enjoy tossed with a field greens salad, or with steamed baby vegetables such as broccolini and miniature carrots. Shown below is arugula with pink navel oranges and sliced almonds. Bottom line: Eat more vegetables!!
Maple Dijon Vinaigrette
2 tsp lemon juice (fresh is always better, but bottled will do)
2 tsp white wine vinegar
1 tsp real maple syrup (note the emphasis on real, natural maple syrup)
1 tsp dijon mustard, whole-grain or not
3 Tbsp Extra Virgin Olive Oil
Salt and pepper
In a large bowl, whisk together the lemon juice, vinegar, maple syrup, and mustard with a fork. Drizzle in the olive oil, whisking continuously until combined. Season lightly with salt and pepper. Add your greens and toss.
