I've heard of replacing the oil in a recipe with applesauce but I'm not sure aboutwhether you substitue the toal amount or only part of it. Does any one know more about this?
Yes!. You use the exact amount the recipe calls for only use applesauce instead of oil. I've been doing this for years and everyone raves that my cakes, breads, etc are so moist!

To check if it will work in your recipe.. There are some recipes, like cookies, where applesauce does not work as well. If you are unsure, use half oil and half applesauce. If it turns out fine, you can use just applesauce the next time.
