Here are several foods that are high calorie and safe for individuals with Crohn's disease:
nuts
avocado
fatty fish (ex salmon)
grilled lean meats
dairy free cheeses and yogurts (soy, almond, hemp, rice)
bananas
and other non acidic lower fiber fruits and veg that agree with your sons system: carrots, most apples, pears, apricots, melon, lettuce, cucumbers and string beans

My son has crohn's and needs simple meals that are convenient while he is in college. We are looking for low fiber, high calorie foods to keep weight on him and not flare the crohn's.
