Do you have good apple recipes to share?

I'm all about cooking what's in season. Just so happens it's apples right now. Does anyone have any apple recipes to share?

Sweet and simple. Not sure if this could be called a "recipe," as it only has two ingredients, but if I'm looking for an apple with just a little something more, I'll sprinkle a pinch of cinammon on small slices. Yummy!
Apple Yogurt. This is again nice and simple, but it tastes great (just like the apple and cinnamon recipe, which is again one of favorite ways to have apples.) Take some low-fat yogurt. Take an apple and you can either dice it in cubes or grate it. Add the apple to the yogurt. Chill and serve. You can also add other fruits like grapes for flavor. Like I said, it is very simple but delicious and low-fat.
Homemade apple sauce. I love home made applesauce: peel and cut apples into small pieces; cook over medium heat until apples are tender; add some cinnamon and sugar (if desired); mash or blend. Delicious with potatoe pancakes!
Juice them. If you have a juicer, try juicing them!! They go great with greens because they sweeten them up. Broccoli, cabbage, cucumber and apple...delicious and so incredibly good for you!

Since the apple is one of the most vitaminful fruit you should drink everyday an apple shake for your healthy! :)

here is it's recipe:

Apple Shake 

Ingredients (serves 4) 

° 3 green apples, peeled and chopped 
° 500ml fresh soy milk (reduced sugar) 

Method 

1. Combine all the ingredients in a blender and blend until smooth and creamy. Taste it, add more sugar, if necessary. Chilled or serve with ice.
