Day 2 of kitchen clean-up: Frozen Pork loin

The other night I found a marinated pork loin in the freezer. Sadly I did not write what type of marinate it is, so this will be a surprise. I also have a lot of carrots. So here is what I came up with. I figured out that the pork loin was in the same marinate as the pork loins I had made a while ago, so I decided to cook this one differently. As today was a busy workday and having to take my tween to dance I decided to put it in the crockpot. I served this loin with garlic mashed potatoes and asparagus (a new recipe I tested and enjoyed!). The end result was good, but not excellent. The pork was tender and fell apart perhaps it needed something else and I will try to make it again differently. The mashed potatoes were AMAZING. Next day I was about to freeze the leftover of the pork so to make at a later date the Meat Croquets but I had nothing planned for lunch decided to finish the asparagus and mashed potatoes with the not so successful pork, yet suddenly to my surprise it got better. So I ended up enjoying a pretty nice lunch by myself while working at the computer. Sorry family. WIll do it again sometime and will remember to let it sit for a while prior to serving!

 INGREDIENTS

1 marinated pork loin
2 cups of shredded carrots

DIRECTIONS

  1. Place the pork loin inside crockpot in high
  2. Leave it for about 3 hours then add the carrots
  3. Let it cook in low for another hour
