For dinner, on my own, last night I threw some things in the crockpot before school. My recipe was modeled off a recipe my friend Meg emailed me and a Robin Miller Quick Fix Meal. I skipped the chicken this time because it was just me. I will make this again for Brady and add chicken because it was a great filling meal!
Rosemary Tuscon Veggies
2 c. chopped mushrooms
2 c. chopped onions
1 can white beans
3 c. veggie broth
4 c. swiss chard/collard greens
1 tsp. rosemary
salt and pepper
Place veggies and broth in the crockpot. Add seasonings and cover with greens. Heat on low for 3-5 hours.
Yum! I ate this over brown rice.
I have been a little MIA lately but I have been working out, teaching, tutoring and spending time with girlfriends! Things should be more normal next week! I also have a fun Valentine dinner planned!!
