Creamy Whole Wheat Pasta With Vegetables

Sharing some cute photos of our kitty cat. Her face was entirely under the couch when I found her, I think she was sleeping. I was late in getting the camera and she was already scooting her way out.
I saw this recipe on Food Network the other day from Giada De Laurentiis. I can't remember exactly what she called it Whole Wheat something. Super simple and easy. The original recipe called for brussel sprouts but I didn't have any so I subbed broccoli and spinach. It was really hearty and filling.
My son is loving broccoli so this dish was a hit! I love when he eats all his greens = proud mommy. My little mess from cooking... Normally a total war zone. Obviously, I love to cook but somedays I hate to clean up. This recipe really didn't take much time and the food processor did all the chopping.

First boil water and add your pasta. While the pasta is cooking chop the veggies and saute. Drain the pasta, add the cheese, salt, pepper and serve.

Ingredients (4-6)

Instructions

In a large saucepan bring a pot of water to boiling and cook the whole wheat pasta according to the instructions. (Prior to draining the pasta reserve at least one cup of water and set aside.)

While the pasta is cooking drizzle some olive oil in a large skillet over medium-low heat.

Using your food processor chop your onion finely and add to saute pan cooking for 2-3 minutes. Add the garlic. While this is cooking chop your broccoli tops in the food processor and add to saute pan. Finally add the mushrooms and spinach and chop in the food processor then saute until tender. Salt and pepper.

Drain pasta and return to the large saucepan. Add the mascarpone cheese and some of the reserved pasta water until desired creaminess is reached. Salt and pepper and top with vegetables.
