First boil water and add your pasta. While the pasta is cooking chop the veggies and saute. Drain the pasta, add the cheese, salt, pepper and serve.

In a large saucepan bring a pot of water to boiling and cook the whole wheat pasta according to the instructions. (Prior to draining the pasta reserve at least one cup of water and set aside.)
While the pasta is cooking drizzle some olive oil in a large skillet over medium-low heat.
Using your food processor chop your onion finely and add to saute pan cooking for 2-3 minutes. Add the garlic. While this is cooking chop your broccoli tops in the food processor and add to saute pan. Finally add the mushrooms and spinach and chop in the food processor then saute until tender. Salt and pepper.
Drain pasta and return to the large saucepan. Add the mascarpone cheese and some of the reserved pasta water until desired creaminess is reached. Salt and pepper and top with vegetables.
