Creamy Pesto Chicken & Shells!!…

Hello there!  Happy Tuesday to you!  What about this weather, huh?  It’s out of control here right now.  Last night it was really bad.  There was torrential rain, a lot of thunder and lightening.  In the middle of the night, I received an emergency alert about flash flood warning!  It was crazy.  I think it’s supposed to continuing raining today.  If it cools off the temperature, then I will be happy.  It’s too hot and humid out there.  Do you hate rain or do you not mind it?  I hate rain.  The only time that I don’t hate it is when it serves a purpose which it hopefully will be doing today by cooling the temperature.  I could use a brush of fall temperatures right about now.  Oh well.  One can dream!

Yesterday, I forgot to feature an amazing deal that I got at Pathmark that I need to feature!  I saw on the coupon blogs that there was a $2 off coupon floating around for Ajax laundry detergent.  The detergent was on sale at Pathmark for $1.49 which means that it would be completely free!  I knew I had to print as many as I could get and I could print two.  I also had a coupon for free Entemann’s muffins and English Muffins were on sale.  So those 4 items are what I purchased.

Well, I will answer my question that I posed.  I paid a whopping 88 cents for all of the items in the picture above!  Can you believe it?!?!?!  I was shocked!  I literally only had to pay with change from my purse.  That made me so happy!  Mike couldn’t believe that we got all of that for 88 cents!  We are stocked with laundry detergent because we already had two bottles at home that we got for close to nothing and now we have two more bottles to add.  I’m happy about that!

Last night I made a new recipe for dinner.  I noticed a new Philadephia cooking creme on the shelves at the store and I’ve been wanting to buy it.  So I just bit the bullet and spent the money to buy it so we could try it.

I decided to do my own take on a similar recipe to what was on the back of the container since I didn’t have all of the ingredients.

Creamy Pesto Chicken & Shells



1/2 cup of any type of vegetables you want (I used red bell peppers, zucchini, frozen broccoli and snap peas)

4 small boneless skinless chicken breasts

2 cups of cooked shells pasta

1 tub of Philadelphia Creamy Pesto Cooking Creme


Cut the chicken into smaller chunks and add to a skillet sprayed with cooking spray.  Cook until no longer pink.  In a separate skillet while the chicken is cooking, add your vegetables with cooking spray.  In the meantime, while that is cooking, boil your shells.

When the shells are done add to a pot and pour in half of the pesto and stir to combine.  Once the vegetables are cooked, add that to the shells and stir.  When the chicken is done add that and the rest of the cooking creme.  Keep warm until ready to serve.

We served our dinner with garlic bread.

We both loved our dinner!  The pesto sauce wasn’t overpowering at all and it wasn’t too creamy which I was afraid of.  It had the right balance between creme and pesto.  I really enjoyed it.  I thought that it would make for a great dinner any day of the week.  We have some leftovers for dinner tonight which is always great!  I would definitely recommend trying this especially if you are a fan of pesto and don’t feel like making your own sauce.
