Cream of Broccoli

Cream of Broccoli
Serves: 4
Ingredients
700 ml vegetable stock
50 g butter
50 g flour
100 ml cream
250 g broccoli
10 g garlic
40 g onion, chopped
Salt to taste
Pepper to taste
Method
Heat 10 g of butter in a thick bottomed pan. Saute the onions till translucent.
Add the flour and remaining butter together to make a roux, keeping in mind not to burn the flour.
Cut the broccoli into small pieces and add in the pan, stirring with the roux.
Add all the stock, garlic and onions. Boil till the broccoli is tender and well cooked.
Blend with the remaining ingredients in a blender, keeping 10 ml of cream aside for garnish.
Strain and serve hot.
