Hey guys- this week has been super busy for me! I’ve had so many tests UGH! The worst part? I don’t have very exciting eats to share with you all- although I did get up to some baking a la April .
But firstly, I titled this post ‘Confession’ because it was really only this week that I realized I have a serious love affair with SF maple syrup. NO joke- I actually put it on EVERYTHING… its a little more than embarrassing..

Monday’s dessert- rice puffs, chopped apple, DC Dreams and obvi SF MAPLE SYRUP

Today’s snack- WHAT IS THAT you ask? I know, it actually looks pretty darn revolting, but it was tasty okay? and that’s all that matters. This is actually a frozen vanilla yogurt cup with cinnamon… And.. SF MAPLE SYRUP!

Another snack-a-roo from this week… Frozen greek yogurt cup with cinnamon, a crumbled Protein Muffin (recipe below!) and SF MAPLE SYRUP duhhh
Exhibit E (LAST ONE I PROMISE- but I had to share this picture because this bowl o’ oats was actually the reasoning behind my exsistance)
Egg white and cocoa oatmeal deliciousness with a fresh fig, cinnamon, Naturally More and a crumbled Protein Muffin! OH AND of course… SF MAPLE SYRUP!
So.. its MORE than obvious that I eat copious amounts of SF maple syrup but its so tasty-it adds that extra sweet punch to ANYTHING! also.. note that all those dishes above also included cinnamon.. I guess that makes this post two confessions…awkward
Protein Muffins:
Ingredients:
- 3/4 cup liquid egg substitute ( I used 4 egg whites!)
- 45 grams mashed sweet potato (about 1/4 cup or so) (I used 1/4cup pumpkin!)
- 1.5 servings/scoops of whey protein powder (I used Chocolate yum!)
- 3/4 cup wheat bran
- 1/2 tsp NuNaturals NoCarbs Blend Stevia
- 1/2 tsp each baking powder and baking soda
- Cinnamon to taste (I added some cocoa powder too!)
Directions:
- Preheat oven to 350 degrees. Spray a muffin tin with nonstick baking spray, set aside.
- Mix all ingredients.
- Pour batter into muffin tin, bake for about 15-20 minutes or until a knife inserted into the center comes out clean.
So basics… this was SUPER easy to make ( i made the batch in between classes- how’s that for being efficient!)
Once the muffins came out of the oven they looked like this:

OH YEAH… but my little muffins clock in at 67 calories and 10.5g of protein per muffin! Is that a deal or what?! And they taste pretty darn delicious! Perfect for oats or yogurt messes!
As for my ‘moves’ this week… here is what I have gotten up to:
Monday: 40 minute run (it was SO foggy, which made it even more fun!), abs
Tuesday: 20 minute run, abs
Wednesday: 30 minute run, abs
Thursday: Simple dumbbell weights (1o min max), abs
I’m really going to try and incorporate more strength training into my workouts.. I want to do 4 days of cardio and one day of weights.. and Thursday’s weights really don’t count (they were wimpy!) But I’m a true cardio gal at heart…
Well that’s for the day- I’m off to walk my dog (woot woot!?) and get ready for FRIDAY- one more day until the weekend! YES!!
