I started cooking with coconut oil about a year ago after I did my first cleanse with the Clean Program and was searching for healthy fat alternatives. Many of my blogger friends talked about how amazing coconut oil was and I decided I would try it. It sounded strange – an oil that is solid at room temp – but the moment I tried it, I was convinced. This was the best oil I had ever tried.
I use coconut oil in almost everything now, but I especially love using it in my baked goods . I’m always trying to make my desserts healthier, so incorporating coconut oil has not only elevated the flavor of my gluten-free treats, but it has also boosted the nutrition content (especially when I use whole-grain flours like quinoa, millet and brown rice).
