anywho… not too long ago I received a BIG ASH jar of Tropical Traditions Virgin Coconut Oil!
I was a bit thrown on what to make with it- I thought about going savory but this gal don’t do savory! I’m THE QUEEN of SWEET STUFF!
SO…..
When I saw Averie’s recipe for No Bake Coconut & Chocolate Chip Cookie Dough Bites I KNEW what to do with it!
Firstly… here is the beautiful Jar!
ah the FLAVOR was just amazing!! once I opened the jar, I could smell the BEAUTIFUL aroma of sweet coconut!
I used it to make 1/2 batch of the mini balls and added some almond extract too for an extra kick of flavor!
I incorporated them into my lunch today!
chopped carrot, tomato, broccoli, pickle with grilled onions and peppers in balsamic, beans, hummus and a dollop of salsa!
and for something sweet I had two of the Cookie dough balls….
Plus a spoonful of Cinnamon Swirl pb from pb&co that I got in my goodie swap from Ellen! I only had the package for less than 30 minutes and I had already dug into the peanut butter- what can I say? PB is the JAM- esp when mixed with cinnamon and raisins!
This lunch came after a great workout this morning!
4.54 mile run + 3 circuits of Jillian’s No More Trouble Zones DVD
I worked on my abs and triceps!
Anywho-I could REALLy taste the coconutty flavor in the cookie dough balls! that coconut oil is awesome and I cannot wait to experiment more with it! Sweet tater fries baked in coconut oil anyone? YUM!
