Cleaned Up Banana Almond Bread

I have always loved banana  nut bread. My mom used to make it when I was young and I remember it being like comfort food for our family. There is just something about making bread from scratch that really enhances the taste! I cleaned up my mom's recipe and added some cinnamon and almonds (rather than the traditional walnuts) for a little kick and a crunch. Enjoy!

Cleaned Up Banana Almond Bread

2- 3 bananas - ripe cut into pieces
1 brown egg (organic if available)
2 tbls of butter
6 tbls of almonds ( roughly chopped, you will use 2 tbls for the almond topping)
1 1/2 cups of whole wheat flour
1 tsp of baking soda
1 tsp of cinnamon
 a dash of salt

* Preheat oven to 350 degrees
Mix bananas, egg, butter, and almonds in large mixing bowl until relatively smooth. Add in whole wheat flour, baking soda, cinnamon and salt and mix well. Mixture will be lumpy in texture - this is normal. pour mixture into a baking pan that has been sprayed with non-stick cooking spray or you can use a paper towel to put some olive oil on the sides of the pan.Sprinkle remaining 2 tbls. of almonds on top of the bread mixture as topping.  Bake bread for 45 mins or until cooked through. Let cool before you slice and then Enjoy!
