As you may have noticed on the menu, this past week I set out to make some clean breakfast foods. I wanted to make an omelet but it seems every time I try to make an omelet I get impatient and my omelet turns into scrambled eggs. This attempt at a clean omelet was no different! However, despite my impatience I still made one heck of a clean breakfast if I do say so myself! So here's the recipe - if you aren't impatient like me you can make an omelet - but the scrambled eggs are fantastic and super quick!
Clean Spinach and Avocado Egg Scramble
Ingredients: 2 organic brown eggs 3 organic brown egg whites 1/2 cup of skim milk 2 tbsp of Annie's Naturals Tuscany Italian Salad Dressing 1/2 avocado - diced 1/2 cup of spinach chopped 1/2 small white onion diced Salt and Pepper to taste
Instructions: In a medium to large mixing bowl combine eggs, egg whites, skim milk, and dressing. Whisk together so that the mixture is combined well. Add in the avocado, spinach, onion, and salt and pepper. Stir together. Pour mixture into a medium to large skillet and cook through on medium heat. As I said earlier If you want to make an omelet you can let the eggs cook until they are ready to flip, but I am not good at waiting so I just stirred the mixture with a spatula until it cooked up.
