1 cup (200 g) all purpose flour (maida) 1 teaspoon baking powder 1 pinch salt 1 egg 35 g butter 1/2 cup (100 g) sugar 4 well ripe bananas (185 g) 3 teaspoons chocolate chips Extra 1 teaspoon butter to grease muffin moulds
Method
Sieve thrice all purpose flour, baking powder and salt.
Mash well (until smooth) ripe bananas and keep aside.
In a wide bowl, break egg and stir gently with an egg beater (till egg yolk and white well blended and yellow in color). Mix with butter, sugar, mashed bananas and make a smooth and creamy mixture. Add sieved all purpose flour. Gently stir until flour well mixed with egg - banana - sugar mixture.
Preheat oven (OTG) at 180*C or 350 *F.
Pour muffin mixture into greased muffin mould. Gently arrange chocolate chips on top the muffin mixture and bake at 180 *C or 350 *F till golden color or 20 - 22 minutes.
