Here is an interesting recipe a friend told me about. I gave it a try when we had company over last night and they loved it! I didn’t tell them there was cottage cheese in it until after they had chowed down. They were pretty surprised but not disappointed
1 box Sugar Free Chocolate Pudding
1c. lowfat (1%) cottage cheese
1c. light vanilla soy milk
Cool Whip Free
Mix the pudding, cottage cheese, and soy milk together and refrigerate for at least 30 min. before serving. When serving, place a 1/2c. into a ramkin or small bowl and top with Cool-Whip Free (non-fat, sugar-free) and sliced strawberries! This is a very filling dessert because it is packed with protein from the cottage cheese.
