Ingredients
For the paneerpakodas
200 g paneer, cubed
For the batter
½ cup corn flour
2 tablespoon flour
½ teaspoon salt
1½ teaspoon chilli powder
½ teaspoon chilli powder
½ teaspoon baking powder
4 tablespoon milk
For the gravy
80 ml oil
25 g onion, finely chopped
1 ½ teaspoon red chilli paste ( made by grinding whole red chillies )
½ teaspoon ginger paste
½ teaspoon garlic paste
2 green chillies , finely chopped
2 tablespoon coriander leaves, finely chopped
1 cup water
1 teaspoon cornflour
1 tablespoon soy sauce
2 teaspoon vinegar
2 teaspoon tomato sauce
1 teaspoon sugar
¾ teaspoon salt
½ teaspoon pepper powder
For the garnish
3 spring onion , finely chopped
Method
To prepare paneerpakodas:
Mix the corn flour , flour , salt , chilli powder, pepper powder and baking powder in a bowl . Add enough milk to milk a thick batter. Set aside.
Place the paneer cubes in the batter and allow them to marinate for five minutes. Then fry them in some of the oil till crisp and keep aside.
To prepare the gravy :
Dissolve the corn flour in water, and add tomato sauce , vinegar , soy sauce salt , sugar and pepper powder.
Heat the oil in a pan . Saute the onion , red chilli paste , ginger- garlic paste , green chillies and coriander chillies. Mix well.
Next, add the cornflour mixture to the pan and bring to a boil . Set aside. Just before serving , heat the gravy and add the fried paneerpakodas. Cook till semi gravy and remove from heat.
Place in serving dish and garnish with chopped spring onion. Serve hot.
