1 tablespoon cooking oil 1 red capsicum, seeded and sliced 1 red onion, chopped 1 teaspoon minced garlic 500 g chicken or turkey mince 3 cups shredded cabbage 45 g packet chicken noodle soup mix 1/2 cup water 2 tablespoon soy sauce 4 green onions, sliced Coriander or Chinese parsley
Toasted chopped peanuts, to serve
Method
Heat oil in a wok or large frying pan on high heat. Stir fry capsicum, onion and garlic for about 1 minute until tender.
Add chicken mince and stir - fry for 3 - 4 minutes until browned. Break up any lumps with a wooden spoon.
Stir in cabbage and chicken noodle soup mix. Stir in water and soy sauce. Turn heat to high and bring to a boil. Reduce heat to low and simmer for 2 - 3 minutes.
Serve garnished with coriander or Chinese Parsley and toasted peanuts.
