Chicken Alfredo Pizza & Cherry Cobbler Bars!!…

Hi there!  Happy Wednesday to you!  I can’t believe we only have one more day left of February.  I feel like this month flew by so quick!  Maybe it’s because there are only 28 days?  I’m not sure but needless to say, I’m glad February is over with.  Let’s move on to March!  Although, I’m dreading March because it’s my birthday and I’m turning 29.  That is a whole other story and issues to discuss about turning 29, that I will have to talk about another time.  I’m getting closer and closer to 30 and that is scary to me.  I will go into more detail about all of that in another post.

Last night, we decided to make a pizza for dinner.  We used Pillsbury pizza dough since it was finally on sale!  We haven’t had the Pillsbury brand in such a long time because it’s been expensive.  Since I still can’t handle eating tomatoes, we decided to split the pizza down the center and one side would be things that I can eat and the other side is what Mike wanted.

If you guessed the Alfredo sauce side, then you would be correct!  All we did for that side was spread some Alfredo sauce on the pizza, placed pre-cooked chicken on the pizza, along with some mozzarella cheese and frozen spinach.  It worked out quite well!

It was very easy to make the pizza and it tasted great!  Although, my stomach did not agree with me.  Something severely bothered my stomach and it is carrying over to today.  I’m not quite sure if I ate too many vegetables or it was the pizza or what it was but I will be keeping things simple and light today because I’m not feeling well.  Stupid stomach issues!  Hopefully they will get resolved at some point soon.  I’ve had enough of it already.

I decided to make a dessert while Mike was preparing our pizza.  I had almost an entire can of cherry pie filling left from Melissa and my baking fail over the weekend. I didn’t want the filling to go bad so I browsed my Pinterest to look for inspiration.  I was shocked that I actually had pinned the perfect recipe because I had all of the ingredients on hand!  I knew that I had to try making these.  They sounded so good!

Cherry Cobbler Bars (from this recipe )



½ cup butter (room temp)
⅔ cup sugar
¾ tsp Kosher Salt (**I used regular salt, did not have Kosher)
1 tsp vanilla extract
2 eggs
1½ cups flour
21 oz. can of cherry pie filling (**I used light cherry pie filling)


Preheat oven to 350 degrees.  Coat an 8×11 baking dish with non stick spray.  Cream butter & sugar together, add salt, vanilla and eggs. Mix.  Add the flour and mix well.  Spread ⅔ of the batter on bottom of baking dish.  Cover with cherry filling.  Top with small dollops of the remaining batter.  Bake for 30 minutes.  Cool, then slice and serve.

This recipe was super easy to make and it smelled heavenly baking in the oven.  It smelled just like cherry pie!  Once it was cooled, I cut a square and it really did taste like a cherry pie!  It was light and cherries tasted amazing mixed in with the dough.  It was a nice change for a dessert that isn’t chocolate or really sweet.  It had the right amount of sweetness.  I was impressed and thought this was a nice change from the normal cherry pie.

I am a huge fan of cherry pie filling.  I could probably eat it out of the can!  I like it that much!  What kind of pies or pie fillings do you like?

I also like apple pie, and I tried blueberry pie for the first time a few months ago.  I didn’t think I was going to like it but it was actually quite tasty!  I like pumpkin pie too.  I have to say that pumpkin pie and cherry pie are my two favorite pies in the world.  I do like apple pie but it has to be served warm for me for some reason.  I think apple tastes so much better when it’s warm, not to mention a scoop of vanilla ice cream makes it that much better.  Yum!
