I had some left-over cherry chipotle sauce from a previous recipe as well as some extra baked chicken lying around so I thought why not combine them into a salad. I wanted to add some bright notes to counteract the heat of the chipotle so I used some fresh orange as the acid in the vinaigrette. Please click here for the recipe to the chipotle cherry sauce.
Juice both oranges. Slowly whisk in olive oil in a steady stream to create the vinaigrette. Toss greens with vinaigrette. Top with chicken and spoon over sauce.
