Cherry-Apple Pie

Adapted from "Cooking Without a Grain of Salt."

Low-Sodium Pastry
4 cups sliced, pared apples
1 tablespoon flour
1/3 cup sugar
1 tablespoon lemon juice
3 tablespoons cherry preserves
1/2 teaspoon mace

Line 9-inch pie plate with half the pastry. Combine apples, flour, sugar and lemon juice. Pour mixture into shell. Spoon preserves over the filling and sprinkle with mace. Cover with remaining pastry. Slash the top. Bake 40 minutes at 400 degrees F. Makes 6 servings.
