Wednesday is starting out to be better then the past few days, I am still holding out for a miracle.
I received this picture from Jeff as soon as I walked into work and this little guy warms my heart I can’t wait to smother him with kisses and believe me I will.
In an effort to cheer myself up yesterday I wanted a gallon of dulche de leche and graham cracker plus a zillion clodhoppers from 16 Handles some sort of comfort food for dinner.
Something that Jeff and I eat pretty much on a weekly basis is Laughing Cow Mac and Cheese, we love it, well I love it and Jeff likes it. I don’t know that he would ever say he loved food unless it was a pepperoni turnover, pizza or a mint chocolate chip milkshake.
But he likes it so I will take it.
I was in the mood for something cheesy and didn’t want the usual pasta, so I decided to use quinoa and thought it could either taste really good or really bad.
It tasted fantastic! The nuttiness of the quinoa mixed with the cheesiness was so good.
1 cup quinoa (I only had the tricolor on hand)
1 1/2 cups chicken broth
3 chicken sausages ( I used sun dried tomato) (apple chicken sausage is a good one as well)
1 cup cherry tomatoes halved
3 Laughing cow cheese wedges (I used original light but any flavor would do)
1/4 cup shredded cheese of choice
a splash of fat free milk
1.) Place 1 cup quinoa and 1 1/2 cups chicken broth in a large sauce pan and bring to a boil. Cover and reduce heat to a simmer, simmer for 10-15 minutes or until the liquid is gone.
2.) Saute chicken sausage and tomatoes on a skillet sprayed with non stick cooking spray.
3.) Once you quinoa is done, add you tomatoes and chicken sausage. Add 3 laughing cow cheese wedges, cheese and splash of milk. Mix all together and enjoy!
