Cheese & Herb Omelette

Cheese & Herb Omelette


8 eggs
2 tablespoon low - fat cheese
1 tablespoon olive oil
2 tablespoon grated Parmesan
1 chilli
1 bunch mixed herbs ( basil, thyme, marjoram, mint ), chopped
Salt and pepper to taste


Preheat oven to 325 * F or 160 * C.

Mix the eggs, cheese, oil and Parmesan in a large bowl.

Add the herbs.

Pour mixture into a greased flan dish.

Coo for 15 minutes.

Serve hot or cold as tapas ( if you have friends over ).
