Can anyone give me some healthy dinner recipes that are easy?

Raw Curry. I have started to eat a lot more raw food lately...this one is delicous and extremely nutritious! Grate a beet, 3 carrots, and 1 apple. Finely chop some red onion and two celery sticks. Put in a bowl. In a blender combine 2 avacodos, 2 lemons, tablespoon of curry powder, a little oregano, and some olive oil. Blend, adding water to make it smooth and creamy. Pour over the veg and add some pine nuts. It is so yummy and your body will thank you!
