Happy Sunday! I hope everyone had a lovely Christmas! I wanted to thank all my friendly bloggers for their warm congrats...bless you! Christmas eve Cliff and I went to my parents house with the rest of my family to have a pizza party and my two nieces opened their gifts. Next Megan (niece), Vicky (sister), Paul (her boyfriend), Mom, Cliff and myself went to a candlelight service at a local church....it was very nice. Christmas day Cliff and I went to an Asian buffet with some friends....both days were very much enjoyed! Last week I received a box from Nabisco to sample their new product; Brown Sugar Cinnamon Ritz Crackers and to make a couple recipes. My first recipe was:
Brown Sugar Cinnamon Ritz Crusted Tilapia 1/4 cup all-purpose gluten free flour or whatever kind you would like 1/2 stack Ritz Brown Sugar Cinnamon Crackers, crushed 1 egg, lightly beaten 3 pieces of whatever kind of fish you would like....we had Tilapia olive oil salt and pepper, to taste
Heat up your electric skillet to medium heat and add your olive oil (whatever amount you would like). Combine your flour and crushed crackers together. Now, take your fish and dip it in the egg and then the crackers. Shake off the excess. Place your fish in the skillet and add your salt and pepper, to taste. Cook fish till done to your liking and serve.
Cliff and I really liked the taste at the end of each bite with the brown sugar cinnamon flavor.
Now, onto dessert....of course...lol!
Brown Sugar Cinnamon Ritz Banana Sundae
3 frozen banana's
1/4 cup almond milk
3-4 crushed brown sugar cinnamon Ritz crackers
ice cream toppings (we used caramel and chocolate)
whip cream, optional.....but of course you will want this.....a sundae isn't a sundae without whippy!
Place your frozen banana's in the food processor, add the milk and process till smooth. Next, place ice cream in your dish of choice, add toppings, crushed crackers and whippy on top!
Disclaimer: Sample box of Brown Sugar Cinnamon Ritz Crackers were supplied by Nabisco...thank you!
Today my niece Megan came to visit us and spend the night. She is on school holiday, so I snapped a pic of Cliff and her by our tree....or what's left of it from our cats playing on it, around it, and under it.
Look at that cutie.....Tiger....enjoying some sunshine under the Christmas tree....Awwwee!
