Get out a dutch oven pan and drizzle the bottom with olive oil and heat until smoking. Add the chicken and sear on both sides. You're looking for a golden brown chicken. Then, reduce the heat to medium, add garlic powder, cumin, salt, and pepper to taste. Cook for a minute longer and then add the onions and peppers. Cook those for another 2-3 minutes. And finally add the zuchinni and tomato sauce. Cover tightly and cook until chicken is "fall off the bone" tender (approximately 45 minutes). Enjoy!
We didn't use corn tonight, but if desired, slice the corn cob into 4 equal parts. So you'll end up with 4 smaller corn cobs. You'll add it in with the zuchinni and tomato sauce.
