Blue Marlin with Sauteed Broccoli

Posted Sep 01 2010 12:00am
This meal is one of my favorites!  This came from AJ's grandma and we all know grandma's make the best dishes. To top it off, it's healthy!  This is another one of those dishes where you add vegetables to your liking. Here's what you need
1/2 onion (Julienne)
2 large zuchinni (peeled & sliced thin)
1 green pepper (Julienne)
1 can of tomato sauce6 chicken thighsgarlic powdercuminsaltpepper

First off, we used dark meat.  It tends to taste better.  Usually when we go to the store, we get a whole chicken and take it apart.  It 's cheaper then buying the pieces separately.  Get out a dutch oven pan and drizzle the bottom with olive oil and heat until smoking. Add the chicken and sear on both sides.  You're looking for a golden brown chicken.  Then, reduce the heat to medium, add garlic powder, cumin, salt, and pepper to taste.  Cook for a minute longer and then add the onions and peppers.  Cook those for another 2-3 minutes.  And finally add the zuchinni and tomato sauce. Cover tightly and cook until chicken is "fall off the bone" tender (approximately 45 minutes).  Enjoy!

We didn't use corn tonight, but if desired, slice the corn cob into 4 equal parts.  So you'll end up with 4 smaller corn cobs.  You'll add it in with the zuchinni and tomato sauce.
