Blackberries, goat cheese and chickpeas are not typically found together in one dish, except for this skinny salad, which does not taste like diet food. The berries add lightness and acidity, the chickpeas add nourishing protein and soft goat cheese completes it all. Nutritionally, this salad can be a complete meal, as it is is rich in dietary fiber, protein, manganese, calcium, iron, Vitamin C, Vitamin K and the B Vitamin, Folic Acid.
Blackberries contain anthocyanocides and polyhphenol. Both of these antioxidants fight free radicals and in doing so ward off heart disease, cancer and strokes, so putting a few blackberries in dishes here in there is not such a bad idea.
