Benefits of Avocado

The avocado’s rich and smooth texture – thus its nickname ‘’ butterfruit ’’- adds a zing to relishes and dips ,and tastes great by itself too. As a bonus, it has more than 25 essential nutrients , like potassium, vitamins , antioxidants and beta carotenes. It is low on carbs, and high ion fibre, proteins , and fat ( ‘’good ‘’ mono saturated fat ), which is cholesterol free and speeds up your metabolism.

The main purple and green varieties of avocado have a distinct texture and flavor. Hass, the purple variety , has a pebbly skin, but smooth , creamy flesh . Fuerte, the pear- shaped green type ,also has buttery flesh , but it is more fibrous than the purple variety.

To ripen avocado , put them in a paper bag along with an apple and store at room temperature for about three days

To prevent discoloration, toss avocado pieces with lemon juice.

To preserve the delicate flavor , do not couple it with overpowering foods like caviar or smoked salmon.

Avocado dressing

Preparation time : 10 minutes
Serves : 6

Ingredients

2 avocados , peeled
2 tablespoon lime juice
1 clove garlic
½ cup extra virgin olive oil
2tablespoon pine nuts
1/ 2 teaspoon crushed salt
Freshly ground black pepper to taste

Method

1, Place avocado flesh in a food processor and blend till creamy and smooth.

2, Add lime juice , garlic , salt , and pepper and process until all the ingredients are well blended.

3, Set processor to a low speed ; with the motor running, slowly pour in oil in a thin stream. Process till oil is absorbed completely.

4, Taste and adjust seasoning.

5, Chill till required.

6, Sprinkle dressing over prepared salad. Goes best with cubed red apples with skin , cubed cucumber and grapes.

7, Let the salad sit for about 15 minutes before serving.

8, Garnish salad with toasted pine nuts and serve.
